Ok birds, but new to us birds – Penguin Watch – count the number of penguins in time lapse camera shots.

Closer to home is Snapshot Wisconsin. Volunteers classify wildlife images caught on trailcams.

There are 79 ongoing citizen science projects on Zooniverse to consider. Everything from counting birds, identifying animals on trail cams to transcribing handwritten note cards. Oh, and there are galaxy watches as well.
